Mashed Potatoes
Mashed potatoes are a basic, filling dish, but still extremely tasty. Mashed potatoes can be served in many different ways and if you have some left over from one meal, they can be used up in a different way the following day.
Ingredients: 2 medium potatoes for every person (or more or perhaps less, depending on appetites), Salt, butter, just a little milk.
Method: Thinly peel the potatoes and slice them. Rinse the pieces in cold water. Place the pieces in a saucepan and pour boiling water over them to cover. Get the water back to the boil, decrease the heat until the water is just simmering and cook until the potato slices are tender (between 5 and 10 minutes, depending on the thickness of the slices). You can use a fork to check if the potatoes are done. There should be no resistance when it is pricked into the slices and it should come out again very easily. If the potatoes break up – they are overdone! But if the potatoes try to hold onto the fork, cook them a little longer. Drain the water off the potato slices and put the pan back on the hob at the lowest temperature, just to dry the potatoes a little. Mash the potatoes (use a potato masher, or a fork) and add the salt, pepper, butter and milk. Mash until smooth. Serve with your meal.
